CCN Pasta Salad

A good pasta salad belongs at every summer gathering, and this version brings more staying power thanks to the chickpea pasta and healthy fats. It’s flavorful, satisfying, and perfect for meal prep, cookouts, lake days, or easy lunches throughout the week.
Serves: 5 to 6
Ingredients
- 1 (8-ounce) box chickpea fusilli or penne pasta, cooked according to package directions
- 1/4 cup extra virgin olive oil, divided
- 4 cloves garlic, minced
- 1/4 cup capers, rinsed and drained
- 1 cup sun-dried tomatoes, julienned
- 1 cup pitted olives, halved lengthwise
- 3 tablespoons chopped fresh oregano (or 2 teaspoons dried)
- Pinch red pepper flakes
- 1/2 cup nutritional yeast or 1 cup fresh parmesan cheese
- 1/4 cup toasted pine nuts
Directions
Cook pasta as directed and set aside.
Heat 1 tablespoon olive oil in a large skillet over medium heat. Add garlic and cook until fragrant and lightly golden. Stir in capers and cook another minute. Add sun-dried tomatoes and olives and cook for about 5 minutes, stirring occasionally. Add oregano, red pepper flakes, and remaining olive oil, then remove from heat.
Transfer cooked pasta directly into the olive mixture. Toss with nutritional yeast or parmesan cheese until coated. Season with salt and pepper to taste and garnish with toasted pine nuts and fresh oregano.
Serve warm, chilled, or at room temperature.
Chicken Salad

This is one of those healthy summer recipes that feels elevated but takes minimal effort. The avocado creates a creamy texture without mayo, while the grapes and pecans add the perfect balance of sweetness and crunch. It’s ideal for meal prep lunches, wraps, lettuce cups, or quick protein-packed snacks throughout the week.
Serves: 4-6
Ingredients
- 2 baked or grilled boneless skinless chicken breasts, diced
- 1 large avocado
- 1 tablespoon lemon or lime juice
- 1/4 teaspoon sea salt
- 1/8 teaspoon black pepper
- 1 cup halved red seedless grapes
- 1 celery stalk, diced
- 1/3 cup chopped red onion
- 1/2 cup toasted chopped pecans
Directions
In a medium bowl, mash the avocado and mix with lemon or lime juice, salt, and pepper.
Add chicken and stir to coat. Gently fold in grapes, celery, and onion. Sprinkle toasted pecans on top just before serving.
