Our participants just completed their first week of our Wellness Remodel Challenge and are LOVING every minute of it. The general consensus is that this food is just too good, they don't feel deprived, and they have more energy and FEEL better! And to that we say, yes, yes and yes! It's not too late to register and go at your own pace. The recipes alone are worth it! These Vanilla Chai protein bars were a huge hit during the first week so we thought we'd share them with you here too!
Vanilla Chai Protein Bars
Makes 4 bars; serving size 2 bars
12 dates, pitted and roughly chopped
1 Tablespoon almond or peanut butter
2 Tablespoons coconut oil
½ teaspoon vanilla
2 scoops collagen powder (Vegetarian: Substitute collagen powder with pea protein or another vegetarian protein powder of your preference.)
½ teaspoon cinnamon
¼ teaspoon ginger
1/ 8 teaspoon cardamom
1/ 8 teaspoon black pepper
1/ 8 teaspoon cloves
1 Tablespoon hemp seeds
In a food processor, blend together the dates, nut butter, spices and coconut oil until a paste is formed. Transfer this to a medium mixing bowl. Once everything is fully mixed, pack it into a 4x8-inch rectangle. Top with hemp seeds and refrigerate until chilled. Chill for 4 hours or overnight. Once chilled, cut into 4, 2x4-inch bars.
