Our Spring into Summer Challenge participants have just finished up week 1 of the challenge and are on their way to a healthier and happier way of eating. The fog is lifting leaving our participants with looser fitting clothes, clearer skin, and more energy, just to name a few... And who wouldn't want those results? It's not too late - JOIN US!
The great thing about our challenges is that they are always new and always seasonal. We take into account the produce that's in season and also the seasons themselves. Spring is patio season for most of the country (unless your're in California - where it's ALWAYS patio season). And what better to eat on the patio than burgers from the grill? These turkey kale burgers have been a huge hit with our participants and are quick and easy to make!
Turkey Kale Burgers
1 pound organic, free-range turkey
1 cup fresh or frozen kale
1 onion, chopped
2 Tablespoons worcestershire sauce
2 Tablespoons tomato purée (mix 1 Tablespoon of water with 1 Tablespoon of tomato paste)
2 Tablespoons fresh or dried parsley, chopped
½ cup rolled oats
Salt and pepper, to taste
Mix all ingredients together and form into patties. Cook in a skillet or on the grill until browned, about 10 minutes each side. Top with lettuce, tomato, pickle, onion, mustard, clean ketchup etc.
