Our Sweet Summertime Challenge participants just finished week 1 and are starting to feel the effects of all the delicious, summer food! Not only do we focus on seasonal foods each challenge but we also focus on your season of life. Summer is BUSY. And the last thing you want to do after a day at the beach or the pool is come home and cook an elaborate meal. Dinner on the table in less than 30 minutes makes everyone happy! Add this dinner to your summer rotation - it's a keeper!
Simple Chicken Sausage & Zoodles
5 Tablespoons avocado oil, divided
2 sweet Italian chicken sausage links (Vegetarian: CCN-approved veggie burgers like Hillary’s or soy free Dr. Praegers)
2 spicy chicken sausage links
1 medium yellow onion, sliced
1 red bell pepper, sliced
1 orange bell pepper, sliced
1 ½ Tablespoons tomato paste or ¼ cup of tomato sauce (optional because we don’t want you to waste food, so use it if you have it already opened or plan to use it later)
4 cloves garlic, minced
½ teaspoon dried oregano
1 cup chicken or vegetable broth
Salt and pepper
2 Tablespoons fresh curly parsley, ﬁnely chopped
2 medium zucchini, spiralized or pre-spiraled from the store (2-2 ½ cups)
Heat 2 Tablespoons of the oil in a large skillet with a lid over medium-high heat. Add the sausages and cover the pan. Cook for about 7 minutes or until just browned on the bottom. Uncover and cook for 5 minutes more, turning, until browned on the outside but not yet cooked through. Transfer to a cutting board and slice. If you’re using veggie burgers, do the same and cut into 1-inch pieces. Set aside.
Immediately add the remaining 3 Tablespoons olive oil, onion and bell peppers to the same skillet. Cook for about 5 minutes or until the vegetables soften. Add the tomato paste and stir. Add garlic and cook for 30 seconds or until fragrant. Return the sausage to the pan and add the oregano and broth. Season with salt and black pepper. Cover the skillet and simmer until the sausage is cooked through, about 10 minutes. Uncover and simmer until the sauce has reduced by a quarter, about 5 minutes more. Stir in parsley. Transfer to a large serving platter or bowl and add the zucchini noodles. Toss thoroughly until the noodles begin to wilt and are fully incorporated. Serve immediately.
