Savory Sweet Potato Waffles

Our Fresh Start Healthy Heart challenge is underway! Our team really killed it with the recipes this time, a quick fan favorite being these waffles. Waffles? Healthy? Yes! These lend themselves to savory toppings or sweet and they are great to make and freeze for busy weekday mornings. 

If you don't have a waffle maker, feel free to make pancakes. As with most of our pancake and waffle recipes - low and slow is the way to go! Also, lots of coconut oil to make them slide right off. 



Savory Sweet Potato Waffles 

Serves 2 

Coconut oil 

2 cups mashed sweet potato (About 1 large sweet potato TIP: Bake ahead of time.) 

2 eggs whisked (egg alternative like chia eggs work with this recipe) 

2 Tablespoons coconut flour or 1/ 3 cup almond flour 

¼ teaspoon sea salt 

½ teaspoon fresh rosemary (optional - Cara’s choice) 

Heat up waffle maker and spread coconut oil liberally to the iron. 

In a large bowl, mix together sweet potato, eggs, flour and seasonings. Spoon half the batter in the waffle iron and cook for 5 minutes. Keep waffle on low and when it’s done slowly tip your iron to let it fall out. Low and slow is key here! Remove waffle and cook remaining batter.

Once waffles are done cooking, pull off iron and go savory or sweet with your toppings! Sweet topping suggestions: berries and a warm drizzle of nut butter. Savory topping suggestions: fried egg or avocado, sliced tomato, red onion and/or sauteéd spinach.
