Sharing a quick and filling breakfast from the Sweet Summertime Challenge today. It's no secret smoothies are our favorite, but sometimes you want something a bit more savory in the morning!
Quick Chilaquiles Egg Scramble
1 teaspoon avocado oil
2 Tablespoons red onions, diced
1⁄2 cup green bell pepper, diced
3 eggs, mixed
1 corn tortilla, chopped
2 Tablespoons salsa verde
(short, clean ingredient list)
1⁄4 cup avocado, sliced
1 teaspoon cilantro, chopped
In a sauté pan heated to medium-high, add the oil, onions and peppers. Cook until veggies are softened, about 5 minutes. Reduce the heat to low and mix in the eggs and tortilla until cooked completely. Top with salsa, avocado and cilantro.
