Our participants have started week 2 of our Fresh Start Healthy Heart challenge and they are starting to see the benefits. As a society, we tend to focus so much on weight loss that we forget all the other parts that make up the whole. Your weight is simply one piece of feedback. Sleep quality, overall energy, emotional mood, etc. are just a few of the other parts that we tend to overlook. We are so driven by the number on the scale that we overlook the purpose behind it - to be healthy. And our participants are starting to feel just that! So while some scales might be moving and others aren't - it's ok! Because the factors that we can't exactly measure (like energy, sleep quality and mood) are just as important as the factors (like weight) that we can measure.  

It's Tuesday so you know what that means - Taco Tuesday! This dinner is so easy to prepare and only takes one pan - which means clean up is just as easy! Winning all around! 



Mexican Cauli-Fried Rice 

Serves 4 

2 Tablespoons avocado oil 

1 pound lean ground turkey breast (or grass-fed beef/bison/wild game) 

½ medium yellow or white onion, diced 

½ red bell pepper, diced 

½ green bell pepper, diced 

3-4 Tablespoons CCN or clean taco seasoning 

1 (15-ounce) can diced tomatoes, drained 

1 (4-ounce) can diced green chilies 

1 (12-ounce) bag cauliflower rice ½ cup chicken bone broth 

1 (15-ounce) can black or pinto beans, rinsed and drained 

Toppings: diced avocado, sliced black olives (rinsed and drained), fresh chopped cilantro, clean salsa or pico de gallo, lime wedges 

Heat the oil in a large skillet over medium-high heat. Add in the ground meat, onion, bell peppers and taco seasoning. Cook, browning the meat and breaking up as you go until it’s cooked through, about 10 minutes. Stir in the tomatoes, green chilies, cauliflower rice and broth. Simmer about 5-10 minutes, until most of the broth is absorbed and everything is heated through. Fold in the beans and cook a minute or two until heated through. Divide into bowls and serve with desired toppings.
