Lemon Coconut Energy Bites
Makes 28-30 bites
1 cup dates, pitted
1 cup rolled oats
½ cup cashews
2 Tablespoons coconut oil or cashew butter
Juice and zest of 1 large lemon
¼ cup hemp seeds
2 Tablespoons white chia seeds (black is ok too!)
1 cup unsweetened shredded coconut, plus extra for rolling
¼ cup fresh lemon juice
1 teaspoon lemon zest
½ teaspoon turmeric
1 teaspoon vanilla extract
Combine all ingredients in the bowl of a food processor. Pulse till ingredients are evenly chopped and starting to stick together forming a ball. Transfer to the fridge and chill for 30 minutes. Using a small cookie scoop (or about 1 Tablespoon measuring spoon), portion into balls and roll together with your hands. Pour extra shredded coconut into a small bowl and roll the balls in coconut, coating lightly. Store in the fridge or freezer in an airtight container until ready to eat. Serving size is 2-3 energy bites.
