Hummus Deviled Eggs

Looking for a last minute appetizer to serve for the upcoming holiday? Something that tastes good and is healthy? Look no further than these Hummus Deviled Eggs. It's hard to improve on such an iconic original but the addition of hummus gives these eggs an extra boost of protein.
Hummus Deviled Eggs
Serving size: 2-3 eggs
6 hard-boiled eggs, peeled
1/ 3 cup hummus
1 Tablespoon of Dijon mustard
Squeeze of lemon juice
¼ teaspoon sea salt
¼ teaspoon black pepper
¼ teaspoon chili powder
Sprinkle with paprika (optional)
Top with tomato and cucumber
Slice each egg in half lengthwise. Remove yolks and place them in a mixing bowl. Add hummus, lemon juice, mustard and spices. Mix with a fork until well combined. Fill the center of each egg with mixture.
