Hawaiian Chicken Burgers

You may not be able to take a vacation right now but you can certainly cook a dinner that tastes like one! We transported our Wellness Remodel Challenge participants to Hawaii with this quick and easy dinner. The sweet pineapple paired with the spicy aioli has us all saying ALOHA!
Hawaiian Chicken Burgers
Serves 4
For the burgers:
1 pound ground chicken breast (ground turkey works, too!)
½ cup green onion, finely chopped
2 Tablespoons coconut aminos
1 teaspoon smoked paprika
½ teaspoon chili powder
½ teaspoon garlic powder
½ teaspoon cumin
Sea salt and black pepper, to taste
For serving:
whole-grain buns (like Dave’s Killer Bread brand)
4 grilled pineapple slices (about ½-inch thick)
Avocado slices
Butter or Bibb lettuce
Chipotle aioli (optional - see below)
For the chipotle aioli blend:
¼ cup clean avocado or coconut oil mayo
½ teaspoon garlic powder
1 chipotle chili in adobo sauce (from a can)
Juice of ½ medium lime
Preheat the grill to medium high. In a large bowl, combine the ingredients for the burgers, forming into 4 patties with your hands. Place both the burgers and pineapple slices on the grill. Grill for about 3-4 minutes on each side. The first side should have nice charred grill marks before flipping. Serve on buns with lettuce, grilled pineapple, avocado slices and a drizzle of chipotle aioli.
