Ginger Pineapple Chicken

If you're looking for a quick and easy dinner this Ginger Pineapple Chicken is it! From the fridge to the table in under 30 minutes it's a winner with everyone in the family! Because who doesn't love pineapple?!
Ginger Pineapple Chicken
Serves 4
For the chicken:
2Tablespoons avocado oil
1 pound chicken breasts (Vegetarian: Substitute 1 (15-ounce) can beans/legumes of your choice for the chicken.)
Sea salt and black pepper, to taste
1 Tablespoon fresh chopped parsley, plus extra for serving
1 cup fresh diced pineapple
For the sauce:
½ cup filtered water
½ cup coconut aminos
1 cup fresh diced pineapple
5 pitted dates
1-inch piece of fresh ginger, peeled
For serving: 2 cups cooked brown or wild rice, 4 cups steamed broccoli florets
Warm the oil in a large skillet over medium-high heat. Add chicken to the pan. Season with salt, pepper and parsley. Cook until browned, about 5 minutes. Turn and cook on the other side until browned, about 5 minutes. Turn chicken over so the herbed side is facing up. Remove from heat. Make the sauce by adding all the ingredients to the bowl of a food processor or blender and blend until fully combined and smooth. Pour blended sauce into the pan with your chicken. Add the remaining cup of chopped pineapple to the pan, arranging around the chicken. Reduce heat to medium low to simmer. Cover and cook about 5-7 minutes to reduce the sauce a bit. Serve over brown/wild rice and steamed broccoli. Top with fresh chopped parsley.
