Frozen Strawberry Energy Bites

These strawberry energy bites from our Fresh Start Healthy Heart Challenge are next level YUM! Proof that food that is good for you can also taste really, really good.
Frozen Strawberry Energy Bites
Makes 15 energy bites (2-3 bites per serving)
1 cup frozen strawberries
1 cup rolled oats
½ cup unsalted raw sunflower seeds, pecans or walnuts
½ cup coconut or almond flour
1-2 Tablespoons coconut oil (divided)
1 Tablespoon raw or manuka honey for added sweetness (optional)
Unsweetened, shredded coconut (for rolling)
Pulse strawberries in food processor until large chunks are broken down. Add next three ingredients in with 1 Tablespoon of coconut oil. Pulse until the mixture becomes a fine paste and begins to form into a ball. (If the mixture looks too dry, pulse a bit longer to help release the natural oils from the seeds. If this does not help, add the extra Tablespoon of coconut oil, about a teaspoon at a time.)
Use a small cookie scoop to scoop the batter into balls, then roll with your hands. If needed, freeze mixture to get the right consistency to roll the balls.
Place the shredded coconut onto a plate and roll the balls in it, coating the outside. Place in an airtight container in the fridge. Refrigerate at least 2 hours or overnight.
These must be eaten cold as they won't hold up at room temperature.
