We are all about quick snacks here at CCN but sometimes you want to get a little fancy with your food. Good news is you can be quick AND fancy with these avocado caprese rice cakes!
AVOCADO CAPRESE RICE CAKES
1 ripe avocado, mashed
1 teaspoon fresh lemon juice
Salt and black pepper, to taste
4 brown rice cakes
½ cup grape tomatoes, halved
2 Tablespoons basil leaves, roughly chopped
1 Tablespoon hemp seeds
1-2 Tablespoons balsamic glaze for serving
For the balsamic glaze:
½ cup balsamic vinegar
3Tablespoons coconut sugar
Mix the mashed avocado with fresh lemon juice, salt and pepper. Spread avocado mixture on rice cakes, then top with the rest of the ingredients.
Make the balsamic glaze. In a saucepan over medium heat, combine balsamic vinegar and coconut sugar. Stir until sugar dissolves and mixture comes to a boil. Reduce heat to low, simmer until mixture is reduced by half and starts to thicken (about 12 minutes, depending on the quality of vinegar). Cool glaze completely before use. Keep leftovers refrigerated in an airtight container for up to a month.
