Applesauce Pancakes

We're a week into our Fresh Start Healthy Heart challenge and our participants are killing it! Those new to CCN are always surprised with how good the food tastes! And how much you can actually eat. We're a big believer in good food tasting good and that deprivation will never lead to long-term changes. Here's one of the hit recipes from week 1.

Applesauce Pancakes 

Serves 1 

2 eggs 

1/ 3 cup applesauce 

¼ cup almond meal/flour 

½ teaspoon baking powder 

¼ teaspoon vanilla extract 

1 teaspoon maple syrup 

1 teaspoon coconut oil 

Whisk the 2 eggs in a small bowl, then add the maple syrup, applesauce and vanilla. Next, mix in the almond meal and baking powder. Heat the pan to medium low, add the coconut oil, swirl to coat the pan, and then add the batter (dollar size pancakes cook best). Let cook 3 to 4 minutes then flip and cook for 2-3 minutes longer till set and cooked through. Serve with 1/2 cup of fruit on the side - we're loving blueberries right now.
