Antipasto Salad

Our participants are headed into week 3 of our Fresh Start Healthy Heart which means they're beginning to see CCN as a lifestyle. We re-introduce gluten and diary (if tolerated) and show them how our way of eating isn't a diet but a sustainable way of life. Using food to fuel our bodies properly and enjoying it along the way! 

This salad is a great quick lunch option and can be prepped ahead of time quickly and easily. It definitely has us dreaming of warmer Spring days ahead! 

Antipasto Salad 

Serves 2 

1 romaine heart, chopped 

½ cucumber, sliced 

10 cherry tomatoes, halved 

6 artichoke heart pieces (Trader Joe’s has these jarred) 

½ cup garbanzo beans 

¼ cup sunflower seeds 

1/ 3 cup olives 

½ cup roasted red peppers, chopped (Trader Joe’s has these jarred) NOTE: IF buying jarred, just be sure there aren’t added harmful preservatives. 

Organic turkey breast and turkey pepperonis (optional) 

Add 2 Tablespoon of CCN-approved Italian dressing, like Tessamae or Primal Kitchen OR 2 Tablespoons of Apple Cider Vinaigrette

Apple Cider Vinaigrette 

Serves 6 

¼ cup apple cider vinegar 

2 Tablespoon fresh lemon juice 

1-2 Tablespoon maple syrup 

1/ 3 cup avocado oil 

1 Tablespoon Dijon mustard 

1 clove garlic, minced 

Sea salt and black pepper, to taste
