My mom always said she hated any lemon dessert, so I never paid lemons much attention. When I got older and tried a lemon dessert on my own, it was a flavor explosion I’ll never forget! I’ve been obsessed ever since. This lemon cake feels light and incredibly satisfying, particularly if you like the combination of slightly tart and slightly sweet as much as I do.

Lemon Cake
Serves 12
Ingredients
2¼ cups almond flour
½ cup gluten-free flour
½ teaspoon baking soda
Dash of sea salt
3 eggs
½ cup pure maple syrup
⅓ cup grass-fed butter
2 tablespoons grated lemon zest
⅓ cup fresh lemon juice
1 teaspoon pure vanilla extract
Optional Glaze
5 ounces full-fat plain Greek yogurt
2 tablespoons fresh lemon juice
2 tablespoons raw honey
2 tablespoons powdered sugar
Directions
Preheat the oven to 350°F. Line a 9-by-9-inch baking pan with parchment paper.
In a medium bowl, combine the almond flour, gluten-free flour, baking soda, and salt. In a large bowl, combine the eggs, maple syrup, butter, lemon zest, lemon juice, and vanilla. Whisk until well combined. Add the flour mixture to the wet mixture one cup at a time, stirring well. Pour the batter into the prepared pan.
Bake until a toothpick comes out clean, 25 to 30 minutes. Let the cake cool completely in the pan. If desired, make a glaze: In a small bowl, combine the yogurt, lemon juice, honey, and powdered sugar. Whisk well to combine. Drizzle the glaze over the cooled cake.
