May 1st! Can you believe it? This year is almost half over already. And so is our Spring into Summer Challenge. Participants have finished the cleanse portion of the challenge and are entering week 3 - our lifestyle week! This is where each participant receives a meal plan tailored to their specific caloric needs. All foods are included (yes, even carbs!) and we show our participants what a lifestyle of CCN begins to look like.
A favorite from week 2 was this Strawberry Tossed Salad and since it's prime strawberry season, we thought we'd share!

Strawberry Tossed Salad
1 cup romaine lettuce
1 cup spring mix
½ cup diced cucumber
¼ cup shredded carrots
¼ cup slivered almonds (option to toast before using)
½ cup sliced strawberries
¼ cup corn
Option to add 4 ounces chicken breast
Toss together with Lemon Honey Dressing to experience the full ﬂavor.
Lemon Honey Dressing: combine juice of 1 lemon, 1 teaspoon honey (raw or manuka preferred), 1 Tablespoon extra-virgin olive oil, sea salt and black pepper, to taste.
