With warmer weather right around the corner (or in some places already here), lunch should be quick, easy, and refreshing. Taking advantage of in season produce (strawberries) and combining carbs, protein, and healthy fats - this is sure to be in your weekly rotation in no time!
Strawberry Farro Caprese Salad
1/2 cup cooked farro (or other ancient whole grain like quinoa, amaranth, bulgur, barley, etc.)
1/2 cup sliced strawberries
1 Tbsp. pine nuts/walnuts/pecans (or nut/seed of your choice)
1 ounce fresh mini mozzarella balls/pearls
5-6 cherry or grape tomatoes, halved
1 Tbsp. fresh shredded basil
1 Tbsp. hemp seeds
1/2 Tbsp. extra virgin olive oil + squeeze fresh lemon juice
Toss everything together. Serve chilled or warmed. Enjoy!
