Today is also October 1st. It's officially the last 3 months of the year! This time of year is usually filled with more eating, more drinking, and less moving. But it doesn't have to be this way. Because CCN is a lifestyle and not just another diet or restrictive way of eating, you can enjoy the holidays and still stay on track.
We asked, you answered, and we're listening - our Healthy Holidays challenge is now in between Halloween and Thanksgiving with a start date of November 5th. Registration begins in just a few weeks! Think all the flavors and foods of the holiday season with that CCN twist. Our goal is tor provide you with tasty, realistic options to help you maintain your healthy lifestyle through the holidays.
And because we just can't help ourselves with the pumpkin, here's another fall favorite that transitions well into the holiday season - pumpkin chocolate chip chickpea bars.
Pumpkin Chocolate Chip Chickpea Bars
Coconut oil spray
2 egg whites
1 (15-ounce) can chickpeas, rinsed and drained
½ cup pumpkin purée
¼ cup pure maple syrup or raw honey
2 Tablespoons coconut sugar
2 scoops collagen peptides (optional)
2 Tablespoons natural cashew butter
1 teaspoon cinnamon
½ teaspoon pumpkin pie spice
½ teaspoon baking powder
¼ cup plus 2 Tablespoons dark chocolate chips
Preheat oven 350 degrees. Prepare an 8x8 inch square baking dish with coconut oil spray and set aside. Place all ingredients except chocolate chips in the bowl of a food processor or blender. Blend until smooth. Mix in ¼ cup of the chocolate chips by hand with a spatula. Pour the batter into the prepared baking dish and spread out evenly. Transfer the batter to the prepared baking pan and spread into an even layer. Add the remaining 2 Tablespoons chocolate chips on top. Gently press the chocolate chips into the batter with your fingers. Bake for 30 minutes until bars are golden brown, firm and a toothpick inserted into the center comes out clean. Let cool before cutting into bars. Enjoy
