And if you still need some more convincing, here is one of the most anticipated recipes of the challenge. I don't know about you, but "cookie dough" anything has me SOLD.
Cookie Dough Energy Bites
Makes about 25-30 energy bites
1 ¼ cups natural cashew butter (or other natural nut/seed butter)
½ cup raw honey
2 teaspoons vanilla extract
2 cups rolled oats
½ cup ﬂax meal
3 Tablespoons unsweetened shredded coconut
½ teaspoon cinnamon
1/3 - 1/2 cup mini dark chocolate chips
Combine the cashew butter and honey in a microwave safe bowl and heat for 30 seconds. Stir to combine and then stir in the vanilla. In a separate bowl, combine the oats, ﬂax, coconut, cinnamon and chocolate chips. Pour the peanut butter mixture into the dry mixture and mix well to combine. If mixture is too dry, add melted coconut oil until all ingredients are well incorporated. Use a cookie scoop to portion out the mixture, and roll into balls using your hands. Store in the fridge or freezer.
