Cherry Rhubarb Overnight Oats

Our Summer Slimdown is off to a great start! Only 2 days in and the amount of energy in the group is positively contagious! Which we can't really blame them when the food is so amazing. We are so wired to think that "healthy" and "diet" should be deprivation-based. Our first time participants are pleasantly surprised when they realize just how much food they actually get to eat! Only 2 days in and this is already a participant favorite! Hot or cold - it's a great way to start your morning. And super easy too!

Cherry Rhubarb Overnight Oats 

½ cup rolled oats 

2 Tablespoons chia seeds 

½- ¾ cup cherry rhubarb compote (recipe below) 

¾ cup unsweetened coconut or nut milk 

2 Tablespoons toasted pecans 

1 teaspoon pure maple syrup 

1 teaspoon vanilla extract 

1 teaspoon cinnamon 

Add all ingredients to a pint sized mason jar and stir to combine. Seal the jar and refrigerate overnight. Enjoy chilled or warmed the next morning. 

TIP: Make several assembly-line style and use for quick easy meals throughout the week.

Rhubarb Compote 

Serves 4 

4cups rhubarb, sliced into ½ -1 inch cubes 

1 Tablespoon vanilla 

¼ cup maple syrup 

2 cups cherries, fresh or frozen 

Preheat oven to 350 degrees. Combine rhubarb, vanilla and maple syrup in mixing bowl until rhubarb is evenly coated. Place on a baking sheet and bake for 15-20 minutes or until rhubarb is softened. Remove from the oven and cool until room temperature. Mix in cherries and refrigerate or add straight to overnight oats and crispy quinoa.
