Blender Dark Chocolate Zucchini Muffins

Valentine's Day is only a week away and with it tons and tons of treats! Most holidays center around food but it seems like all this day is about is the candy! (At least it seems that way based on what my kids bring home from school.) 

Just because you're trying to be more healthy doesn't mean you have to give up chocolate or sweets entirely. Our blender dark chocolate zucchini muffins are proof! A "muffin" that tastes more like chocolate cake with a hidden dose of greens? Yes please! Add a few holiday themed sprinkles and your kids won't even suspect these are "healthy" treats! 

Blender Dark Chocolate Zucchini Muffins

Makes 8-10 muffins 


1/2 cup pumpkin purée 

1/2 cup natural almond butter 

1 egg 

1 teaspoon vanilla extract 

1/4 cup cacao powder 

1/4 cup raw honey 

1/2 teaspoon baking soda 

Dash sea salt 

Fold in: 1/2 large zucchini, shredded & squeezed dry with a clean kitchen towel (about 1 cup) 

Pour into silicone muffin cups or lined muffin tin until 3/4 full. Top with 1/4 cup mini dark chocolate chips 

Bake at 375 degrees for 20-25 minutes. Let cool at least 10 minutes before removing.

*Can double the recipe - leftovers freeze beautifully! But good luck having any if your house is anything like mine!*
